Chocolate-banana cake
Garnished with favourite tropical dried fruit, bringing the smell of Christmas, based on dark chocolate and bananas.
Ingredients:
- 150 g butter of room temperature
- 150 g sugar
- 300 g plain flour
- 3 eggs
- 2 small bananas
- 130 g dark chocolate
- 200 g tropical dried fruit (ready mix or picked up to taste)
- 70 ml alcohol (muscat wine or dark rum)
- 1/4 tsp cinnamon
- pinch of ground nutmeg
- pinch of ground ginger
Preparation:
Melt chocolate in water bath, crush bananas. Whisk butter until white and while whisking add sugar and eggs one at a time. When all of the ingredients are combined, add melted chocolate and crushed bananas and blend everything.
Add tropical dried fruit (chop the bigger ones, such as dates, apricots, etc.).
Add plain flour at the end and combine together.
Put dough in the tray layered with parchment paper.
Bake for 30 minutes at 180°C degrees, once done cover the cake with silver baking foil and bake for another 30 minutes. Once cake is baked and has cooled down cover with icing or chocolate, or you can simply use icing sugar.
