Meringue nests with whipped cream and fruit

Ingredients:
Meringues
- 4 egg whites
- 220g caster sugar
- 1/2 tbs lime juice
- pinch of salt
Additionally
- 300ml cream 36% fat
- tbs icing sugar
- 250g fresh fruit (blueberries, strawberries)
Preparation:
Whisk egg whites with the whisking arm until hard. When the egg whites are so hard that they can be kept upside down and don't fall down, continue whisking adding tbs of sugar one after another. At the end add lemon juice. The foam should be shiny and very hard.
Add the foam to a pastry bag and shape the nests on parchment paper lining a baking tray: first shape a round cookie, and then gradually build walls.
Dry the nests in a preheated oven at 80°C degrees for about 4,5 hours.
Stuff the cooled meringues with cream whipped with a tbs of icing sugar, then garnish with fresh fruit.
