Italian style sandwiches with basil pesto
Prepare toasts and spread butter on them. Put on rocket, ham, mozzarella slices, tomatoes and fresh pesto. Cover with a second slice of bread, enjoy.
Ingredients:
Servings: 2 sandwiches
Sandwich
- 4 slices of Italian style bread
- 1 mozzarella
- middle size tomato
- 2 slices Prosciutto ham
- a handful of rocket
- butter
Pesto
- 1 cup of fresh basil leaves
- 1/2 cup of fresh mint leaves
- 1/4 cup of parmigiana or grana padano
- 2 bigger garlic cloves
- 1/4 cup of blanched almonds (originally pine nuts)
- 1/4 cup of olive oil
- pinch of salt
Preparation:
Pesto
Put washed, dried basil and mint leaves into a high container. Add parmigiana, garlic, almonds, olive oil and a pinch of salt, then blend in a food processor. If the pesto gets too thick, you can add more olive oil to get your favourite texture. It's worth tasting this during preparation to add more salt or garlic, if necessary.
Sandwich
