Light salad with toasts
Sometimes you just crave something light and nutritious. Our salad is an ideal solution. You get all of the nutrients and, in addition to that, satisfies the need for a flavour sensation.
Ingredients:
- a handful of rocket leaves
- a handful of water cress
- a few leaves of Romaine lettuce
- 2 eggs
- 3 slices of bread (best if whole-wheat bread)
- 2 small cucumbers
- a few cherry tomatoes
- 50g feta
Honey mustard sauce
- 3 tbs olive oil
- 2 tbs balsamic vinegar
- 1 tbs Dijon mustard
- 1 tbs honey
- salt, pepper
Preparation:
Put rocket, rapunzel and Romaine lettuce torn into pieces and mix in a bowl. Boil hard eggs for about 10 minutes. In the meantime, prepare the toasts and chop them into one cm long cubes. Place egg quarters, halved cucumber slices and halved cherry tomatoes into the salad. Add the pieces of toast and chopped feta.
Combine with olive oil, balsamic vinegar, mustard, honey, salt and pepper. Add the sauce just before serving.
