Hummus with aromatic cilantro
Despite the limited amount of ingredients, such as chickpeas, tahini, olive oil, lemon juice and garlic, hummus has a fantastic flavour and adds a lot of variety to many dishes.
Ingredients:
Servings: 4
- 2 tins of chickpeas or 500 g of cooked chickpeas
- 3 tbs sesame spread (Tahini)
- 3 pinches of ground cumin seeds
- 4-5 tbs olive oil
- half of glass of cold water
- 5 tbs lemon juice
- half of bunch of coriander
- 3 garlic cloves
- salt to taste
Preparation:
Put into a blending pot: chickpeas, olive oil, tahini, freshly squeezed lemon juice, chopped garlic, add half of the water. Blend to a creamy purée. If the mixture is too thick add more water until creamy. Add salt to taste and blend.
Place prepared hummus into serving bowls, add olive oil and cumin seeds. Serve as spread for bread or dishes.
