Sweet California plum mousse
Natural, sweet plum flavour, topped with a delicate hint of red dry wine, rounded off with silky honey sweetness.
Ingredients:
- 500g California plums
- 0,5l red dry wine,
- few tbs natural honey (I used buckwheat honey)
Preparation:
Pour plums with wine, then add honey. Boil and keep on a low heat for about 1 hour. Cool down, put into the fridge so that flavours combine together. Boil on the low heat the next day. When you notice that you can't stir it any longer, you can add a litte of hot water. Put everything into a blender and blend until smooth.
Boil jars as well as lids. Put mousse into a pot. You can use up hot water left from boiling jars to clean the blender - it will be much easier to clean. Dry jars and lids. Keep mousse on a low heat. Put into jars, twist and put them upside down until cool. You can lick the pot!
